Cucumber are originally native to Southern Asia, but grown around the world today.  China still is the #1 producer of cucumbers, with over 2/3 the total production output.  Cucumbers are apart of the gourd family of plants.

Nutrition Benefits of Cucumbers

Cucumbers are not known for high amounts of vitamins or minerals, as they are comprised of 95% water (which is also why cucumbers are considered a great hydration vegetable).  What cucumbers do have is antioxidants – particularly phytonutrients such as flavonoids, lignans, cucurbitacins, and triterpenes.  Phytonutrients have been linked with anti-inflammatory and anti-cancer benefits.

You can find the most nutrient dense part of the cucumber in the skin and the seeds.

Storing Cucumbers

Cucumbers are stored best at room temperature, not in the refrigerator.  And keep them away from your bananas, tomatoes, and melons – as these items produce a natural ripening gas, Ethylene, that cucumbers are very sensitive to.
